Fresh whole Cassava tubers are harvested, washed, peeled, grated and blended into a paste-like consistency where it is then filtered, dried and sifted with utmost care to be the Organic Cassava Flour you see in the package. Cassava flour is made from the whole, white part of the cassava root. The root is dried and finely ground to produce a finely textured gluten-free flour that you can use in many of the same products that might otherwise require wheat flour.
